A healthy snack that's easy to make - these little balls can serve as a great pick-me-up after sport or as a healthy alternative to biscuits or cake.

Since the dawn of the carrot cake, it’s been a well-known fact that carrots go well in a sweet dish. But as a delicious ball for in between meals? Now that’s a new twist in the tale. Unlike many carrot cake recipes, these balls don't need any granulated sugar or mass amounts of icing, meaning you can enjoy them without a guilty conscience.

Why is this recipe good for you?

Cashews provide you with over 6 milligrams of iron per 100 grams. This is particularly good for vegetarians and women with heavy periods. The magnesium they contain also ensures good functioning of the nervous system and muscles. Furthermore, the calcium and phosphorus they offer form a perfect combination for strong bones and healthy teeth. The tryptophan within them also ensures a good mood, since it is allows for the ‘happy hormone’ - serotonin - to be produced in the brain.

Dates are a healthy alternative to industrial sugar - not only do the fruits taste intensely sweet, they are also full of fibre, vitamins and antioxidants.

Ingredients 

1 Small carrot
5-6 Dried dates
60 g  Cashew nuts
50 g Shredded coconut
2 tbsp XbyX Daily Energy
1 pinch Cinnamon
Possibly 1-2 tbsp  Cold water
Optional: 1 tbsp XbyX Take It Easy

Preparation

  • Lightly toast the cashew nuts in a pan without oil, set aside and leave to cool slightly.
  • Pit and roughly chop the dates.
  • Peel the carrot, remove the stalk and grate into fine pieces. If using organic carrots, leave the peel on.
  • Place all the ingredients in a blender and process into a sticky mixture. If it is still too dry, add a small amount of cold water.
  • Place the mixture in the fridge for approx. 30 minutes and then shape into small balls.
  • Roll the balls in the grated coconut.
  • The energy balls can be stored in a closed container in the fridge for at least 2-3 days.
